Appetizer: Grilled octopus with charred lemon, oregano, and chili-lime emulsion.

Main course: Pan-seared Arctic char with gin-infused fennel, lemon butter, and microgreens.

Dessert: Gin-soaked lemon lavender crème brûlée flambé, served tableside.
